food allergy starts when we ingest the protein ara a in peanut and then the body absorbs the protein in the mucosa of the esophagus. studies show that absorption of the protein at a young age leads to lower sensitivity to the allergen. there was a study that showed that societies such as the middle east where they gave their children peanut at a much younger age suffered less peanut allergy than children in western countries such as England. They compared children in Israel with children in England and found that the english children had higher peanut allergy because they were fed with less peanuts as children
